It is a polysaccharide composed of randomly cross-linked glucose, which is formed by high-temperature melting and polycondensation of glucose, a small amount of sorbitol, and citric acid.easily soluble in water,slightly sweet, and no special taste. It is a food component with health care functions and can supplement the water-soluble dietary fiber needed by the human body.
Application
Food grade polydextrose is commonly used as a replacement for sugar, starch, and fat in commercial beverages, cakes, candies, dessert mixes, breakfast cereals, gelatins, frozen desserts, puddings, and salad dressings. It is also used as a humectant, stabiliser, and thickening agent.
